I think it depends on position but usually a 5* is a player whom fully developed before everyone else did and thus have a very good advantage. Now the exception to this is QB but a lot of times a 5* have already peaked in their senior year of high school.
Another flaw with the star system is that theirs a huge talent gap in high school. Not knocking anyone, but look at Joey O'Conner. He'll probably be ranked as a 4* but he's playing against 3A competition where 3A players are much smaller than 5A players. Idk I've always felt that they were overrated at every position except for QB and sometimes RB but I think it depends more on the coaching the team has.
